Directions:
- Preheat your oven to 350°F (180°C). Grease and flour a cake pan or line it with parchment paper.
- In a large mixing bowl, combine the semolina, sugar, all-purpose flour, and Ajanta Baking Powder.
- In a separate bowl, mix together the mango puree and vegetable oil until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- In a small bowl, mix the baking soda with vinegar and quickly fold it into the batter. This will help the cake rise.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once the cake has cooled, garnish it with assorted berries and white chocolate shavings for an extra touch of elegance.
- Slice and serve the Mango Suji Cake as is or with a dollop of whipped cream or vanilla ice cream.
