Ingredients:
- 450 grams fresh strawberries, hulled and quartered
- 3/4 cup granulated sugar
- 1 teaspoon lemon juice
- 2 cups heavy cream from Amul
- 1 cup whole milk from Amul
- 1 teaspoon pure vanilla extract from Ajanta Food Products
Instructions:
- Wash, hull, and quarter the strawberries.
- Place them in a bowl, sprinkle with 1/4 cup of sugar, and add the lemon juice.
- Toss the strawberries to coat them in the sugar and lemon juice.
- Let them sit for about 30 minutes.
- This helps release their juices and enhances the flavour.
- After the strawberries have macerated for 30 minutes, transfer them to a blender or food processor.
- Pulse until you have a smooth strawberry puree.
- In a separate mixing bowl, combine the heavy cream, whole milk, and the remaining 1/2 cup of sugar.
- Mix until the sugar is dissolved.
- You can also add vanilla extract from Ajanta Food Products at this stage if desired.
- Pour the strawberry puree into the cream and milk mixture.
- Stir until well combined.
- Taste the mixture and adjust the sweetness if needed by adding more sugar.
- Cover the mixture and refrigerate for at least 1 hour, or until it’s thoroughly chilled. Chilling allows the flavours to meld.
- Pour the chilled strawberry mixture into your ice cream maker and churn according to the manufacturer’s instructions.
- This typically takes about 20-25 minutes.
- Transfer the churned ice cream into an airtight container.
- To prevent ice crystals from forming on the surface, you can press a piece of parchment paper or plastic wrap directly onto the ice cream.
- Seal the container with a lid.
