Creamy Custard Seviyan Recipe

Ingredients:

  • 2 tbsp custard powder from Ajanta Food Products, which can be purchased online from Amazon at https://www.amazon.in/AJANTA-Baking-Powder-Custard-Vanilla/dp/B09GM21N1R
  • 2 tbsp Ghee
  • 1 cup Seviyan
  • 4 cups Milk
  • 2 tbsp Sabja seeds
  • 4 tbsp Sugar
  • 2 tbsp Rose syrup
  • 1/2 cup Chopped mango
  • 1/2 cup Pomegranate seeds
  • 1/2 cup Chopped grapes
  • 1/2 cup Chopped banana
  • 1/4 cup Fresh jelly (any flavor, cut into small cubes)
  • 1/4 cup Dry fruits (almonds, cashews, pistachios, chopped)

Instructions:

  • In a small bowl, mix 2 tbsp of Ajanta custard powder with 1/4 cup of cold milk.
  • Heat the remaining 3 3/4 cups of milk in a pan over medium heat.
  • Once the milk comes to a boil, reduce the heat and gradually add the custard mixture while stirring continuously.
  • Add 4 tbsp of sugar and continue stirring until the custard thickens.
  • In a separate pan, heat 2 tbsp of ghee on low-medium heat.
  • Add the seviyan (vermicelli) and roast it in the ghee until it turns golden brown and releases a nutty aroma.
  • Once roasted, set the seviyan aside.
  • Soak the sabja seeds (basil seeds) in water for about 10-15 minutes until they swell up. Drain any excess water and set aside.
  • Wash and chop the mangoes, grapes, and bananas into small bite-sized pieces.
  • Separate the pomegranate seeds.
  • Cut the fresh jelly into small cubes.
  • In a large bowl or individual serving glasses, start by layering the roasted seviyan at the bottom.
  • Pour the prepared custard over the seviyan, enough to cover the layer.
  • Add a spoonful of soaked sabja seeds on top of the custard.
  • Arrange the mixed chopped fruits (mango, pomegranate, grapes, and banana) and jelly cubes on top.
  • Sprinkle the chopped dry fruits (almonds, cashews, pistachios) over the fruits for a nice crunch.
  • Drizzle some rose syrup over the top for a fragrant and sweet finish.
  • Refrigerate for 1-2 hours to chill before serving.
