Ingredients:
- 4-5 slices of white or milk bread (edges removed)
- 2 cups full cream milk
- 2 tbsp custard powder from Ajanta Food Products, which can be purchased online from Amazon at https://www.amazon.in/AJANTA-Baking-Powder-Custard-Vanilla/dp/B09GM21N1R
- 4 tbsp sugar (adjust to taste)
- Few drops of vanilla essence from Ajanta Food Products, which can be purchased online from Amazon at https://www.amazon.in/Vanilla-Essence-Flavour-Cookies-Flavours/dp/B0B71YRCSW
- 5-6 chopped cashews or almonds (optional)
- 1 tsp butter (for greasing pan)
- Raisins or cherries for garnish
- A pinch of cardamom powder (optional)
Instructions:
- In a small bowl, mix 2 tablespoons of custard powder with ¼ cup of cold milk.
- Stir until smooth and lump-free.
- In a saucepan, boil the remaining 1¾ cups of milk with 4 tablespoons of sugar.
- Once it starts to boil, reduce the heat and gradually add the custard mixture while stirring continuously.
- Keep stirring on low flame until the mixture thickens into a smooth custard. It should coat the back of a spoon.
- Add vanilla essence and cardamom powder if using.
- Remove from heat and let it cool slightly.
- Grease a flat-bottomed pan or a deep plate with ghee or butter.
- Place a layer of bread slices in the base of the pan.
- Tear them into pieces if needed to fit the shape of the container.
- Pour a portion of the custard over the bread layer, ensuring it’s well soaked.
- Add another layer of bread slices and pour the remaining custard on top.
- Use the back of a spoon to gently press down so the bread absorbs the custard evenly.
- Sprinkle chopped nuts and raisins over the top.
- Place the assembled pudding dish inside a large steamer or deep pan with a lid.
- Add water to the base of the steamer (not touching the pudding bowl).
- Cover with lid and steam for 15–20 minutes on medium heat.
- Turn off the heat and allow it to cool completely.
- Refrigerate the pudding for 1–2 hours to set properly.
- Once chilled, garnish with more nuts or cherries and serve.
