Ingredients:

  • 4 tablespoons of custard powder from Ajanta Food Products, which can be purchased online from Amazon at https://www.amazon.in/AJANTA-Baking-Powder-Custard-Vanilla/dp/B09GM21N1R
  • 2 cups of water (for soaking chia seeds)
  • 2 tablespoons of chia seeds
  • 4 cups of milk
  • 4-5 tablespoons of sugar (adjust to taste)
  • 1 small cake sponge cake (cut into slices)
  • 3-4 tablespoons of rose syrup
  • 1 cup of chopped apple
  • 1/2 cup of pomegranate
  • 1 cup of chopped mangoes
  • 1 cup of chopped bananas
  • 1/4 cup of tutti fruiti
  • 4-6 scoops of vanilla ice cream

Instructions:

  • Soak the chia seeds in 2 cups of water for at least 30 minutes, or until they swell and become gelatinous. Set aside.
  • In a small bowl, mix the custard powder with a little cold milk to form a smooth paste.
  • In a saucepan, heat the remaining milk. Once it starts to simmer, add sugar and stir until it dissolves.
  • Gradually add the custard paste to the simmering milk, stirring continuously to avoid lumps. Cook until the custard thickens.
  • Once thickened, remove from heat and let it cool to room temperature. Stir occasionally to prevent a skin from forming.
  • In a large glass bowl or individual dessert cups, start by placing a layer of sponge cake slices at the bottom.
  • Drizzle some rose syrup over the sponge cake to moisten it.
  • Add a layer of soaked chia seeds over the cake.
  • Next, add a layer of chopped fruits (apple, pomegranate, mangoes, and bananas).
  • Pour a layer of cooled custard over the fruits, spreading it evenly.
  • Sprinkle a little tutti frutti on top of the custard layer.
  • Repeat the layering process with more sponge cake, rose syrup, chia seeds, fruits, and custard until you reach the top of the bowl or cups.
